Director’s Letter February 1017

Dear Families,

This winter has been especially great for the children to get outside and play.  The playgrounds do not have much snow on them, but keep sending in appropriate clothing for your children.  Also label all your child’s clothing, so it is easier for the teachers to know what belongs to what child.

2017-2018 Registration:

Registration is in full swing and we are filling up fast.  MWF Nursery is full, but we have some spots in T/TH. Pre-K also has a few spots left. If you are interested in PEEP, let us know the days you are looking at, so we can get our numbers in.  For children going to public kindergarten next year, our KEEP program is a good option to extend the day and participate in some great enrichment activities.  We do not require a registration fee until public kindergarten assignments are confirmed, however, it is still a good idea to pass in your child’s registration now as all registrations are numbered as received and this will help ensure that you receive your day and time preferences.

Fill Our Bucket On The Wall:

You may have noticed on our wall in the hallway that there are kindness buckets.  We are talking about being kind to our friends and family this month and want to know the kind things that your child does or says.  When you catch them doing something nice, please write it on a sticky note and post it on our buckets. Let’s see how many kind acts the children can do.

Parents Night Out:

We are having a parent’s night out on Friday, February 10.  Mark your calendars now and begin to make your plans for a night out.  You may register your child with Patti in the office.

 Healthy Cooking Recipes:

After my workshop on healthy eating for our children and watching the documentary on “Fed Up” (you can watch this for free on Netflix) we came up with the idea to spread healthy recipes around the Co-op.  I will be collecting any recipes that you want to share and putting them into a cookbook to hand out.  If you have a great kid friendly recipe that is healthy, please email it to me.  In every newsletter I will be putting in a healthy recipe for you to try at home.  Cooking with your child is a great way to have them involved in the cooking process and maybe this will entice them to try new things.  Happy Cooking!

Cauliflower Mac and Cheese:

Ingredients:  2 Tbs olive oil

1/3 cup Panko

2 Tbs fresh parsley

1 cup elbow pasta

2 cup cauliflower florets (cut up)

3 garlic cloves

1 onion

½ cup Greek yogurt

¼ cup milk

1 cup shredded gruyere cheese (or cheese your child likes)

¼ cup parmesan cheese

Salt and pepper

Directions: Preheat oven to 375.  Heat 1 Tbs olive oil in a skillet over medium heat.  Add Panko and cook, stirring until toasted.  Stir in parsley, set aside.  Cook pasta.  Within last 3 min. add cauliflower.  Drain.  Heat remaining olive oil in the pot. Add garlic and onion. Cook, stirring often (3-4 min).  Stir in pasta, cauliflower, yogurt, milk and cheeses until smooth.  Season with salt and pepper.  Add more milk if needed.  Spread mixture into a baking dish. Sprinkle the panko mixture on top. Cook 12-15 minutes, until bubbly. ENJOY!

February Estimation:

Come into the office and have your child guess how many hearts are in the container.  The winner will be announced on February 24.  The winner of January’s chocolate cup was McKay Smith.  She guessed 14 and the correct amount was 14.  Great guess!!!

Shout Out Board:

Please give a shout out to your child’s teacher to let them know about the great things that they do in their classrooms.  They love to read them!

Winter Vacation:

School will be closed the week of February 27-March 3.  Have fun with your family!!!
